NYC Bans Trans Fats in Restaurants

Health board’s decision is first in nation

The decision by New York’s Board of Health to ban the use of synthetic trans fats – which are implicated in accelerating atherosclerosis in coronary and cerebral arteries – is courageous, timely, appropriate, admirable and fair. Hopefully the rest of the nation will follow. The costs of the switch will be minimal, but as usual, some will squawk. Statistically, the effect of these substances on speeding up the evolution of heart disease and embolic strokes is of roughly the same magnitude as second-hand smoke, something we have already banned by law, with encouraging improvements in health and decreased mortality.
