Interesting read in Business Week about the complications of producing organic on a scale to “feed the masses”. To me this sentence tells the whole story:
…the number of dairy farms has shrunk to 60,000, from 334,000 in 1980…
Uh .. Gee! I wonder why organic standards are hard to mass produce…
